Pumpkin Truffles
Always a tell-tale sign that autumn has come, major franchises like Starbucks and Krispy Kreme have begun stocking their shelves with pumpkin-flavored treats. To bring a bit of that fall spirit into your kitchen, try out this recipe for delicious pumpkin truffles.
Ingredients:
For pumpkin truffles:
- 1 homemade or store-bought pumpkin bread loaf (6×4 inch loaf or smaller)
- 4 tbsp homemade or store-bought cream cheese frosting
- 2 cups orange candy melts, melted
- ¼ cup dark chocolate, melted
- ¼ cup green candy melts, melted
- 1 tbsp coconut oil, melted
Steps:
- Crumble your pumpkin bread into a large bowl. Then, add cream cheese frosting to the crumbs using a spatula; mix until the frosting is well incorporated. Using a cookie scoop or a measuring spoon, divide out the mixture and place each cake ball on a baking tray lined with wax paper.
- Combine the orange candy melts and coconut oil in a medium bowl.
- Use a fork to add the cake balls into the orange candy melts. Gently roll them around and lift them with the fork, tapping on the side of your bowl to allow any excess chocolate to drip off. Place the covered cake balls back on the baking tray and allow them to set at room temperature.
- Add the dark chocolate to your remaining orange candy melts and mix well. Transfer the mixture into a large piping bag and pipe lines across each truffle, imitating the indents of a pumpkin, and allow them to set at room temperature.
- Transfer the green candy melts into a large piping bag and pipe squiggles at the top of each truffle.
- Let the truffles completely set before serving, then enjoy!
