As far as food goes, fall staples often include pumpkins, apples and anything with spices. While a classic pumpkin pie may be enough to satisfy your cravings, add a little more excitement this season with fun twists on the beloved classics.

Baked Pumpkin Chips

You Will Need:

  • ½ Sugar Pumpkin (found in most grocery stores)
  • Salt
  • Ground Cinnamon

Directions

  1. Preheat the oven to 220 degrees.
  2. Peel the pumpkin and cut it into thin slices. Cut the slices into circles or any desired shape with a cookie cutter. Be careful not to cut them too small, as the final baked chips will be about twice as small as the raw chips.
  3. Place the chips on baking sheets lined with parchment paper and bake for 30 minutes, or until the chip curls and the edges are brown.
  4. Cool the chips for 30 minutes before sprinkling on salt and cinnamon to taste.

To keep the chips crunchy, store them in an airtight container or place them back in the oven before eating.

Apple Pie Sandwiches

Makes 6 Servings

You Will Need:

  • 2 Cups Diced And Peeled Apples
  • 1 Cup Water
  • ½ Cup Sugar
  • ½ Cup Ground Cinnamon
  • ¼ Teaspoon Ground Nutmeg
  • 3 Eggs
  • 5 Teaspoons Cornstarch
  • 12 Slices Bread
  • 2 Teaspoons Lemon Juice
  • ⅔ Cups Milk
  • 2 Teaspoons Vanilla Extract

Directions

  1. Cook the apples and water in a large saucepan for 10 minutes and then stir in the sugar, cornstarch, cinnamon and nutmeg.
  2. After the mixture comes to a boil, continue stirring for two minutes. Once the mixture is thickened, remove it from the heat and add the lemon juice.
  3. Spread about ⅓  cup of filling on six slices of bread and top with the remaining slices.
  4. Beat the eggs, vanilla, milk and sugar and pour it into a shallow bowl to dip the sandwiches in.
  5. After coating the sandwich with the egg mixture, cook it on a buttered pan until golden brown on both sides.

Pumpkin Pie Dip

Makes 4 Cups

You Will Need:

  • 8 Ounces Softened Cream Cheese
  • 1 ¼ Cups Canned Pumpkin
  • 2 Cups Powdered Sugar
  • ½ Cup Sour Cream
  • 1 ½ Teaspoon Cinnamon
  • ½ Teaspoon Nutmeg
  • ¼ Cup Caramel Sauce
  • Graham Crackers, Chocolate Crackers or Gingersnap Cookies for Serving

Directions

  1. Place cream cheese and powdered sugar in a large mixing bowl and blend using an electric mixer until completely combined. Beat the mixture on medium speed until it is smooth.
  2. Add pumpkin, cinnamon, nutmeg and sour cream to the bowl. Mix until everything is blended evenly and the dip is fluffy for about two minutes.
  3. Drizzle caramel sauce on top before serving and store the dip in the refrigerator.
